Has anyone tried making Edwort's Apfelwin by substituting honey for the corn sugar? How did it turn out? I'm sure someone has done this, but I couldn't find much using the search. How much honey would you need?
I brewed something similar I guess you could say. 5 gallons juice, 4.5 pounds honey. OG was 1.072. down to .996 now using wyeast 4766 cider yeast. Tastes pretty darn good for being just over a month since it was brewed. I posted my recipe in the mead forum and was told it needs just a little more honey to consider it a cyser.
If you are looking for the same amount of alcohol as the original AW use just a little less honey than what I used.
