I am trying to make homemade wine coolers. I want to bottle once I hit approximately 3-4% ABV. I will then wait for carbonation, and then pasteurize the bottles to stop fermentation... I don't know the exact gravity of the juice I will be using but would guess that it would be somewhere in te ballpark of 1.060. I was just wondering how long it would take to achieve 3-4% ABV IF I USED A LIQUID champagne yeast? I am planning on making a starter if that changes anything. I only ask because my brewing stuff is at home and I am at schools on the weekends and don't want to miss my 3-4 % ABV window... Thanksgfor the help!
 
There's no way to know how long it will take to ferment that far, could be anywhere from 3 weeks to 2 days. There's a number of factors which influence fermentation, like temperature, pitching rate, nutrient level in the juice, etc. You'll need to get a hydrometer and track it yourself.
