That book deals with commercial breweries and will have very little application to homebrewing, due to the differences of scale.

I have a friend who homebrewed before starting his own brewery. He put it like this:
"The only differences between homebrew and professional brews are consistency and scale."
Of course he can drink his beer at the brewery where it's just as fresh as homebrew and there's other little differences, but that's the big picture.
