So my first IIPA is about 5 days into the primary.
OG was 1.093 ... down to 1.030 as of last night.
Took a taste after taking the gravity reading. Whoa! I feel like I've brewed a "fruit" beer. Seriously, it's pretty overwhelming with grapefruit. I'm gonna let it sit in the primary for another 2 weeks and then on to the secondary for 2-3 weeks with a heavy dose of dry hops. I guess my question is, will this overwhelming grapefruit tame down...or do I need to start looking for clip art of grapefruits to use on my label?
Here is my hop schedule:
1 ¼ oz. Magnum 60 minutes
1 ¼ oz. Magnum 30 minutes
1 oz. Centennial 15 minutes
.5 oz. Simcoe 10 minutes
.5 oz. Centennial - 0 minutes
1 oz. Simcoe Dry Hop
½ oz. Centennial Dry Hop
½ oz. Crystal Dry Hop
I'm pretty sure the Centennial is responsible for my breakfast IIPA ... I guess I underestimated their grapefruity power!
