An Ode to Beer
Hey folks, I'm a long-time homebrewer who's made his first batch of apple cider. I've made Edwort's Apfelwein many times, but this was my first batch of straight dry cider.
My homebrew club did a group cider press, and I got 10 of the 275 gallons we pressed that day. I dosed my carboys with campden prior to them being filled with fresh cider - mine were the only carboys that didn't oxidize, so the pale green apple juice really stood out in the sea of browned cider.
Anyway, after reading the sticky, I chose the S-04. The OG of my juice was 1.045, and after a month it is at 1.003. And it is liquid sulfur. Is this going to clear up in time? Is my cider doomed? Should I relax, not worry, and have a...hard cider?
