I’m a holiday behind. I had schtuff for a thanksgiving brew, that well, it’s still unmilled Malt, pellets, water and yeast starter. One of these days I’ll brew it.

I’m just a beginner... I used the Brewers Best recipe for Holiday Ale. I just followed the instructions, I added hops after I was done steeping, wort returned to a boil and broke... I boiled for 40 minutes then added more hops for the final 15. I did an Amber (first time ever Brewing) and left the entire trub in the primary fermenter left it alone for a month and it turned out awesome. I know, according to the directions you’re not supposed to leave the trub in... but I did, and it definitely didn’t hurt, plus my amber is clear as well... so I did the same with the Holiday Ale... we shall see!

It’s pretty dead on and the needle drops back to room temperature in a matter of seconds once removed...
Lots of ice in a glass and little water put therm in it for roughly a minute... if it reads 0c or 32f it's calibrated if not adjust. I calibrate at the start of every brew day with my handy therm and calibrate the rest from it. Never off that way

I didn’t do that, but will from now on... it stayed steady at 212F when the water was boiling...I live in Virginia on the eastern shore at sea level, so 212F equals boiling here. Thanks for the tip, I’ll make sure I do that before hand!
