Wanted to bounce this idea off the Homebrewtalk community.
I took advantage of Mr Beer's BOGO sale on Patriot Lager, an HME refill they sell that is designed for a relatively light/pale beer, but I'd like to mod them a bit. With a name like "Patriot", I decided to dedicate this brew to actual patriots. My grandfather-in-law was a WWII vet, and flew the China-Burma-India hump in the Asian theater. Thinking of adding some extra hops and rice, and make it into a Chinese-style IPL (or a hopped up Asian-esque beer), in honor of the CBI Hump Pilots Association.
I've been looking around both on these forums, and elsewhere, for some ideas - found some pretty useful stuff here , here, and here, and I think I'm onto something. However, these are normal Asian beer clones, whereas I'm thinking of increasing the hops on mine, maybe to an IBU in the mid-20's. As of now, I've only found info on beer clones, not on more unique Asian-style beers, so I'm kind of winging it here.
The HME can itself (1.87lbs) is designed to do 2.5 gallons, and I'd like to add some rice syrup to it, as well - maybe 25-30% of the HME. If need be, it shouldn't be too difficult to convert this recipe to a 5 gallon, just to make things easier, and add pilsner LME.
Ultimately, I want the flavor to be similar to the actually *good* beers you find in Japan -- not the "imported" swill they sell here in the US. In addition, I want to add a bit of a hoppy kick. The actual hops I'm going to use is still up in the air, but instead of a piney or grapefruit flavor, I'm thinking a spicy flavor, possibly with hints of orange, could be a good fit for this. Saaz, maybe? Challenger?
What do you folks think? What's a good, strong-but-not-overpowering hop flavor to spice up an Asian beer? And what would be a good yeast to get a good, dry crisp out of it? I've seen American Pale Ale & Pilsner used. Is the whole idea ridiculous or completely wrong? I appreciate your input!
