I have a IPA I brewed about 2.5 weeks ago. I took a sample when i transferred it to a secondary and it is at about 8.8% ABV with about 60 IBUs. I noticed it had a somewhat strong alcohol smell and it went down a little hot when i drank the sample. It also wasn't very bitter.It was my first AG beer and I added extra grains because I assumed my set up wasn't going to be very efficient. Can i do a hop tea to increase the perceived bitterness and increase flavor?
