Hi from Belize

I just moved from beautiful , downtown Tokyo where, if you go into any supermarket, you will find a huge cooler full of over 500 brands of good to excellent domestic beer. Unfortunately, in Belize, there is one large brewer. This brewer has a stranglehold on the market and the beer they sell is, to say the least, lackluster. I'm looking to brew something better. I need help!

Right now I'm in the midst of acquiring property and I'm looking for recipes that would work in a hot climate. Average temps in the summer are high 30's-40ºC and winters are on average 25ºC.
