Wanted to say HI. New to brewing and found this site. Its very helpful! Got my third batch in the fermenter right now...a kind of a rye ale....mostly brewing steeped grains and extracts so far.

Anyway....living here on the edge of Raleigh and Cary...feel free to give me a shout if you need an opinion of your brews!

Gary

Hello and welcome from Cary...I'm over by Cary Pkwy and Holly Springs Rd.

I am also from the Raleigh area! I've been surfing this site for a while and just registered today because I've been getting a lot of good stuff reading posts here I figured it'll be a good long-term source of info.

I'm working on my fourth batch now, so I'm pretty noob. Check out American Brewmaster off of Capital Blvd if you havent already. They do up some of their own kits which I've really liked and the guys there are pretty cool and knowledgable.

Yup...thats where I've been shopping...I've done two fo their kits so far...pretty good. Tonight I'm going to rack my newest concoction...its a rye ale that they helped me pick ingrediants for...

Yum!

Welcome from Durham. I'm realizing there are a lot of homebrewers in the area. Does anyone know if there are any group buys on grain going on around here?

Also in Cary here. New to brewing. Looking for some full kegs to convert to keggles. Let me know if you have one or know where to get one.

nice recipes on your site. we are interested in the Mocha Java Stout.

have a question though, we dont use a secondary fermenter and in your recipe that is where you add the coffee. we use a primary fermenter, then bottle. how would we go about adding the coffee?

You can add the coffee in primary, as I filter it first. I take half a pound of very finely ground coffee, cold brew it in the fridge for a few days, then filter it through a coffee filter. You can add it anytime after your fermentation finishes - I would recommend adding it after 2 weeks and then letting it sit in primary for another 2 weeks (or longer).

cool. what do you mean by cold brew it in the fridge?

I add about a liter of bottled water to 1/2 lb. of coffee in a nalgene bottle and put it in the fridge for a few days. The water will extract the coffee flavor without the acidity that comes with normal coffee brewing (with hot water).

interesting. now, nalgene is new to me. does that just happen to be the brand bottle you use? would any bottle with a top work?

your recipe calls for espresso. i couldnt find a chocolate espresso but i found a regular chocolate flavored coffee. does it have to be espresso or is that substitutable?

Still wondering if we will need to use espresso? It seems really hard to find certain espresso coffees?

Re-opening this thread for Trianglers, I took the Carolina Brewing Company tour last weekend and recommend it. Cool place, free tour, free beer. Can't beat it.

Stimulus? Nice handle...

Touring the Carolina Brewery is a great idea. I must make time to do that.

Thanks for the excellent suggestion.

Has anybody toured the new brewery near the Angus Barn on Highway 70 (I think)? It's called Long Rider or something to that effect. The guys at American Brewmasters said they have a definitive (!) hefeweizen that they are calling Shotgun Betty.

Gotta try out Big Boss brewery on Atlantic Ave. and get the Bad Penny. I live on it.

Welcome to HomeBrewTalk, Gary. As you might have noticed there are a lot of Triangle brewers around. Do a search for GRABASS here on HBT. We get together every once in a while for a group brew or brewery tour. Does "Dotneck" refer to a 335? Nice guitars.

Take care,
Chad
