Hey I live and work in Victoria BC. I weld and fabricate custom brewing systems from 5 hectoliters to 300 bbl so I have access to a huge amount of brewing equipment to make my own small system. Just wondering what people think of me making a kettle that would fit on the stove that would be like a double boiler style so that I wouldn't have direct heat on the bottom and I'd have even heat throughout the whole kettle (a double boiler is like a pot within a pot with water in between). Would this work well? And do you think 16 gage ss would be thin enough for the inner shell to get the temp. high enough inside the kettle? Thanks in advance
 
Howdy neighbor of the friendly north! That's a great question I've been wondering to given I have to use my electric stove which always leaves a little toasted malt on the bottom of my pot.
