Just a quick question i cant figure out.
I read a while ago about someone having there HLT for a HERMS set up at boiling while recirculating with the wort going through heat exchanger in the HLT.
I was just thinking, since the amylase enzymes are water soluble they would go into the coil of the HLT and touch the boiling water which would denature them halting the mash. I know if the contact with the surface of the boiling HLT is not that great the enzymes would be OK..
Just wanted to know if anyone has ever had any issues/experience with this and if not what temperature do you keep your HLT at?
