I'm building a manually controlled HERMS for my brew bench. I've got a thermowerks thermometer with 2 separate probes - one for my MT and one for my HLT but I have to switch them over by hand when I do.

I question if I even need a thermowell in the manifold at all on the outflow from the HE, as all I need to watch is these two temps? I'm just going to keep the HLT a few degrees above my target temp. Part of the issue is that all the thermowells I found seem way to long to fit just inside a T fitting. Most seen to be several inches long at least.

Is your herms electric or propane? If electric, I would recommend putting the thermowell and thermocouple on the output end of the HERMS. Brewers hardware has an appropriate length thermowell and Tee fitting.
