Here's what I have on hand, what should I make?

I am doing mini mashes in a 2-gal cooler. I can fit around 4# of grain. I do not have a mill so all my grains come milled when I order. They have been in the fridge, but I am not sure how long they will keep. So I am looking for a recipe that will use what I have on hand. I looked in the database, but I am having trouble coming up with something.

4# Light Dry Extract
.25lb Crystal 60
.25lb Oats, Flaked
.50lb Victory Malt
.88lb Chocolate Malt

Obviously need base grain (and any other grain), hops & yeast.

So what is my best option for using the most grain I currently have on hand?

How long should grain keep in the fridge if already opened and in freezer bags?

Depending on your hop supply, I would opt for maybe a darker IPA, you may need a little more extract.

7 lbs. extract
0.25 lbs. crystal 60
0.5 lbs. victory
0.12 lbs. chocolate malt
 
You could do a session mild with extract, Maris Otter, Chocolate, Crystal 60, either Fuggles or Goldings, and some english yeast...Yummy!
 
Use everything you've got, except you can save a little of the chocolate and get another pound of DME. Like this:

You can use another yeast if you like. I assumed you've got Muntons DME, which ferments quite dry. That's why I like Windsor for this beer - to keep a bit of residual body. I put you in the middle of the road in terms of gravity and IBU so you can tweak it either way if you like. In fact, you could just use what you've got and end up with a decent malt profile!

If you decide to brew this please let me know. I think I'll try it myself. ;)

Any opinions on the recipe? Anything I should change? Figured I'd just try the Victory in there since I had it. Not sure it is really to style. Also, would .5# of Chocolate Malt be too much? Any advice would be much appreciated.
 
Looks good! A half-pound of chocolate would be too much. The Victory should give a nice, complex malt profile to the beer. I think you're on to a good beer, here!
