Hi I'm new and have a question, Im using canned cinnamon apples someone told me I didn't need to use yeast just add sugar and water, so the Jars have been sitting for 3 weeks now is it to late to add yeast any advise will be gratefully appreciated
 
YIKES! I don't really have a clue. I mean, hoping the right wild yeast works for you is like shooting dice and hoping for a 13.

If you have yeast on-hand you can always try, but why risk it?

Did the apples cost much? If not, then why risk food poisoning just to save a few bucks?

Personally, I'd recommend buying more and trying again...using yeast.
 
sometimes you can catch a good wild yeast, but if you are not using fresh fruit, usually you have to introduce the yeast.

As for what to do now, a few questions:
1) is the container open? Just covered with cloth? what?
2) how does it smell?
3) try a spoonful, how does it taste?

Three weeks in an open container is probably spoiled, but I can't be sure. I would be very surprised if something has not happened to it; either fermentation or spoilage.
