Ok, I don't know if my mind was elsewhere today but it probably. I was trying to brew two beers that could age while I am deployed for the next 18months. My first one was a honey brown that I upped the sugar content. Dumb me put the wort straight into the better bottle, so it started to melt. I capped it and put it in the fridge so it could cool in a sanitized enviroment until I can add the yeast.
Question 1: Is the batch ruined?
My second batch I was going for an imperial IPA. I dont think my guy at the home brew store gave me enough ingredients. It boiled over while I was dealing with the other debauckle. The OG was 1.050. I was shooting for over 1.065 so it would be about 7% and could age without going bad.
Question 2: Is there anything I can do now to make it a higher %?
Can I make a concentrated wort and add it to the primary? (ie a bunch of hops and some LME?
 
didnt ruin the brown. just make sure its cooled down enought before pitch the yeast.

the ipa. dissolve some dme in boiling water and add it to the fermenter to reach your target OG.

both will survive.

if these arw being left for 18 months, make sure someone fills your airlocks periodicaly.

also your sanitation better be good or these might develop something over 18 months
 
I think both batches will be fine, and your OG reading could be low if you topped up with water and didn't stir well, that symptom happened frequently to me. I'm more likely to believe it was a stirring/measurement issue and that the beer is fine, I wouldn't try adjusting it just for that. I wouldn't worry about either one, just wait until they are at or below fermentation temperature to pitch the yeast. You may want to get a waterless airlock for after the first week of fermentation so you don't have to worry about the water drying up. Keep them in the dark too.
 
Ok. So I got the Brown to about 78 deg and pitched yeast. I know that there is no way to salvage the better bottle :).
The updated og on the ipa is 1.056. I want to boost it up to 1.065. How much DME should I add? any hops becasue its an ipa?
I should have explained better. I am going to home in six months and put everything in bottles, and then bottle condition for a year. Should be pretty tasty and a great welcome home gift. Now what to call it . . . .how about "Blackhawk Brown Ale"
