My mail order Wyeast packs arrived today and the Ingelmunster (3822) has had it's nutrient pack burst inside and is starting to activate. I assume it only happened during todays transit as it's partially expanded.
I can't simply take it back and swap it for another one as the only way we can get it in New Zealand is by ordering from a small distributor who only imports batches made to order and doesn't keep any on hand. It normally takes 5 weeks to get it.

I intend to brew with it in the weekend, so should i put it in the fridge and hope it goes dormant, then warm it up to continue activating when I'm ready or keep it warm and let it fully activate then brew during a week night.

Once it's been activated how long can it sit in the pack for and should it stay warm or go back in the fridge?
If I put it back in the firdge now do I simply warm it up again to continue activating it?

Cheers. I'll make a starter.
I'll have to google around for an extract recipe. I bought this yeast as it sounded interesting but I'm not sure what to make with it.
