I'm back in the game!

It's been about nine months since I've brewed beer. I'm aching. It hurts. It's finally time to scratch that itch. I ordered ingredients tonight to re-brew one of my last beers, a Rye IPA that featured Cascade as its only hop.

I loved this beer. It is my favorite beer to date, in fact. It also did quite well at the Boston Homebrewers Competition. So, I'd like to take the judges' critiques and rebrew the recipe.

However, I am not buying more Cascade. I have plenty of other hops ready to go that I can use. The question is, though, what do I replace it with? I really liked the aroma of the Cascade. It worked great. I just don't have any more and I don't want to spend the cash on getting more when I already have hops I can use.

Here are some choices: Galaxy, Sorachi Ace, Amarillo, Falconer's 7 C's, Motueka, Summit, Simcoe, Chinook, Mosaic and Citra.

What say you?

You have some great IPA hops in there. I'd say anything from Galaxy, Amarillo, Falconer's C7, Simcoe, and Mosaic would be good flavor/aroma hops that are not too distant from Cascade. Bittering could be Summit or anything with a high AA. I'd stay away from Sorachi Ace for this. Motueka and Chinook are a bit too weird. And Citra, which I like a lot, is a bit tropical and different from Cascade; I don't think I'd want that as a forward hop in a rye IPA.

I really enjoy the Sierra Neveda Rye clone. It is a great IPA. IBU 55
Hops are: .5 oz Bravo 90 min.
.75 oz Magnum 15 min.
.75 oz Chinook 5 min
.25 Magnum 5 min.
Dry hop 1 oz Chinook, .5 Citra, .5 Magnum.
Easy to bump this one up.

I started to replace all of my Cascade with Chinook, but now I'm questioning it. I think I will really miss the citrus from the Cascade. It won't hurt to go in a new direction, but I think I still want to stay in the same single-hop, citrusy direction.

I think Amarillo would be closest to Cascade.

Simcoe would be a good option...kinda similar to a Chinook/Cascade mix with Pine and Citrus flavors with some spicy rye..mmmmm
