Hello!

I had a surplus of pears fall into my lap and decided it was time to take my first journey in brewing by making some Perry.

It started off fine but I feel I may have hit a snag. I’m following a recipe that said to leave the mix in a brewing bucket for a “few days”. I had it in there for 3 days before I had to go out of town for a weekend. I checked and taste tested the mix before leaving, it was lively, bubbling like it should, tasted crisp and refreshing.
I left it in a brewing bucket with an aerator on Friday, came back Sunday (5 days after pitching).

From Friday to Sunday it changed. No bubbles, almost sour smell. I tasted again, not bad but no longer crisp and refreshing, more wine like now.

I’ve bottled the mix into gallon carboys with aerators but I see no activity in the bottles.

Is this the end of the line for this mix and need to start over or could I fix it?

it was crisp and refreshing cause it still had some sugar now its dry and wine like cause the yeast made all the sugar into alcohol.

backsweeten with simple syrup or pear juice with sugar or sweetened pear flavoring

it will be good then but you will gave to figure out away to stop refermentation. like pasteurize or keg and keep cold or metabisulfite and drink flat.

Good to know, Thank you! I’m currently sitting it for a few weeks according to the steps of the recipe. There is no activity/bubbles in the carboys currently, is this a problem or par for the course?
