Hi guys I've been lurking around here for a couple months but I finally decided to join and officially become a home brewer! I'll be brewing my second batch in the next couples days and was hoping you guys could share some opinions on my hop schedule I have planned out.

What do you guys think of this hop schedule....

1 oz. centennial at 60 minutes

1 oz. Simcoe at 30 minutes

2.oz. centennial at 10-5 minutes

1 oz. Columbus dry hop 7 days before bottling.

I also have an ounce of Warrior hops if someone thinks they’d be a good addition or replacement. This will only be my second batch and the first time I just followed a recipe so I’m still not sure when the best times to add hops are. This was originally the Dead Ringer IPA kit from Northern Brewer which came with 5 oz. of Centennial hops but I wanted to do something different and ended up buying the other varieties of hops.

Any opinions or input anyone has will be very appreciated!

We kind of need to know what style you are trying to make. If you're going for another IPA or a hoppy pale or something I would bitter with warrior at 60 min to hit your target IBU then throw all the rest together in combo of hopstand and dry hop. The 30 min addition is just a waste IMO, if you want bittering you can put it at 60 and at 30 there's not going to be much aroma left. What is the rest of the recipe?

Oh my bad it's definitely an IPA I'm going for here. I also plan on adding a pound of dry extract and a pound of corn sugar. I'm wanna boost the ABV.

So you're aiming for like 10.5%? That's into triple IPA range, I think you need more hops. Make sure you pay attention to yeast health - oxygenate the wort, pitch enough healthy yeast, etc.

I was shooting for 8-8.5%. I planned on double pitching US-05 so I figured that would be more than enough. This was originally the Dead Ringer IPA kit from northern brewer which came with 5 oz. of centennial but I wanted to do my own thing so I bought the other varieties I listed. I could add all that with the 3 others to give me 8 total oz. of hops. Do you think that would be enough it should I get more? I'll definitely bitter with the Warrior hops.

Ah okay, I thought you were adding an additional 2 lbs sugar to what you had listed there. So double IPA range. Since you have the additional hops I'd go ahead and use those 8 oz.

Thanks for your input! I’m going to use the warrior first then add the rest at flameout.

I've done this kit, too. I like your switch (big Simcoe fan!) and would save the Simcoe and Columbus for very late so the aromas come through more.

My mistake on this was following the instructions that state to use a partial boil. If you have the room, do a full boil because the hops leave it underbittered if you only do a partial boil.

Good luck!

Unfortunately my pot isn’t big enough for the full boil but hopefully since I’m adding extra hops the bitterness won’t be underwhelming. I planned on dry hopping with the Columbus but wouldvyou suggest dry hopping with the Simcoe as well?

I personally would, but your opinion may be different on Simcoe. I've taken to the opinion that 30 minute hops should either be pushed to 60 for bittering or to 5 minutes or later. People have presented arguments that make a lot of sense to me in doing this and since I'm newer that's really all I can go on until I try differently.

I'd go warrior to bitter, a little centennial late and then toss the rest as a big dry hop, but that's me!
