Help with maltodextrin

I bought a gluten free beer kit because my wife has celiac disease and kids are also highly sensitive to gluten. Inside I found maltodextrin which is not something celiacs can typically use. I cannot use lactose either.
so the question is what exactly is maltodextrin used for and is there something else I can use, or can I just leave it out?

Maltodextrin is made form corn as far as I know. My daughter is celiac is why I believe this is true.

The Wikipedia page for maltodexterin says if it has wheat, it will be labeled as such.
