I just had a Lyme Bay Traditional Mead here in England. Amazing mead. Sweet and floral. My question is with helping me clone this back in Canada. Not sure on the honey type. The ingredients list sulphites so I'm positive it was fermented out and then back sweetened. It was pretty sweet with a heavy mouthfeel. It's listed as only honey water and yeast so the only challenge will be finding the correct honey. 14.5% with very low alcohol taste. Very floral smelling on the nose and taste of floral and anise and clear honey notes. It was also quite dark. About the same as a red ale back home. Anyone ever used heather honey back in North America. I'm guessing this maybe the honey as it's very popular here but does anyone know if this honey or any honey back home has a floral anise flavour?
