I’m getting started early on a Christmas beer and want to brew and English brown with vanilla beans, cinnamon sticks and nutmeg. I never brewed a brown or used spices so I need some help in determining how much of each spice and when to add them. I want the spices to be subtle, especially the nutmeg.
I was thinking English pale, crystal 80, biscuit, black patent. East Kent goldings and maybe Wyeast 1028. Will be a 6 gallon batch. Thanks I really appreciate any help.
