Help with American Nut Brown - Final Gravity?

Hi All,

After a busy couple of years, I'm trying to get back into homebrewing. I picked up a True Brew extract kit and went through the process. I made a couple minor mistakes in the process that I don't think would be that big of a deal:

1 - added the extract before the wort was boiling, so I extended the boil time.
2 - cast yeast at 90 degrees instead of 70 due to time. The yeast was doing its thing happily within 8 hours.

The O.G. target was 1.059 to 1.063 but I measured 1.068

After 5 days I just moved it from a 6.5g carboy to a 5g and took a F.G. reading

The F.G. target was 1.010 to 1.016 but I am measuring 1.030

The yeast did not appear that active so I am not sure it is still fermenting. Should I just let it sit for another week and take another reading, or is there some other action I should take?

Sorry, I really can't help you out because I am new to Homebrewing. I just wanted to say let us know how it turns out because I just purchased a True Brew system and the Nut Brown Ale kit for my first batch. I can't wait to get it going...I will probably go for it next week when I have some time. Good Luck with yours and I am sure some experienced brewers will help you out. This is a great site!!

To the Original poster-

What was your recipe? I can plug it into beersmith and figure out how you got that hydrometer reading. Did you use top up water to get to your desired batch size or did you perform a full boil?

-If you used top off water, I might guess that the wort may not have been mixed thoroughly enough with your top off water and it messed up the reading.
- What temperature was the wort when you took your gravity reading?

As far as fermentation goes, I'd let it sit. I typically let my beers sit in primary for 2 weeks. If I rack to secondary, I let it sit for atleast another 2 weeks, if not longer to let it clear. Many people suggest that before racking it to secondary, take hydrometer readings for atleast 3 days. If the number doesnt change, it's ok to rack to secondary...

Good luck!! No matter what, the beer should still be good if it ferments out. It may not hurt to add a pack of dry yeast to the batch to help clean out some of the off flavors that may come out from the stressed out yeast (pitched at high temps, etc). Safale US-04 should work fine.
 
thanks everyone for the help. I think I'm going to let it sit for a week and then take another hydrometer reading and cast more yeast then if it is still high.

Off to look for best practices for taking routine samples for measurement...

I've taken two samples from secondary over the last six days and I'm still running at 1.024 FG. I pitched some additional Safale 04 last sunday but I didn't get any additional yeast activity despite starting the yeast in a 90 degree glass of water. Tasting the sample it is a bit sugary but not terrible. I checked calibration on the hydrometer and it looks OK. Any other tips?

I was supposed to get an SG of 1.045 on my Nut Brown but I got 1.045. Checked the hydro in water and it's dead nuts on. I'm at two weeks in primary so I'll to a gravity reading at the weekend to see where it is. I'm wondering if I'll make the target FG too. I did have a minor hiccup in boil volume but not enough to account for the difference.
