Growing up, every Thanksgiving, Christmas Eve and New Years Eve my mom would make what she called "wassail." She'd put it in the crock pot and we'd drink it all day. It was awesome.

Then I had the idea to add yeast.

So I need some help. I want to make a 1 gallon batch and then bottle it like a wine. I thought then I could pour out the bottle for one of the above holidays, heat it in the crock pot and enjoy it like I did when I was little.

My mom's recipe is:
1 gallon apple juice
3OZ orange juice concentrate
3OZ Lemonade concentrate
1/2 cup of brown sugar
1/2 t allspice
2 t cinnamon
1/4 t cloves

This is obviously a very sweet drink. My question is how to retain the flavors and sweetness? I'm wondering if I should just ferment 1 gallon of apple juice with the above spices (or should those be changed) and then put in potassium sorbate, add the concentrates, brown sugar and some apple juice concentrate to bump the flavor up.

What do you think? Does that sound like a solid plan or do you have any suggestions? Should I replace the ground cinnamon with half a cinnamon stick or leave the spices as they are?
