I brewed up my first 5 gallon batch a Light Scottish Ale from Midwest brewing supplies. Last night I threw the first bottle in the fridge. Today I pop it open and pour, but I get no head and a weird taste. Any ideas what went wrong?
 
More information needed: How long did you allow it to bottle condition and at what temperature? Did you get some pressure release when you popped the cap off? Describe the "weird taste" you are encountering?

For my Scottish ales which are not very highly carbonated, I find that I need to condition a bit longer at moderate temperatures (68F to 72F) and keep in the refrigerator for about 5 to 7 days for the carbonation to fully absorb into the ale. Even then, it takes a good two weeks in the fridge for the flavors to even out and mellow.
 
Weird taste it some what fruity and possibly from the oak chips. It has been in the bottles 14 days not sure on specific temps. We keep the house about 70. The two weeks in a fridge is a nice tip thanks.
 
My brews after 2 weeks carbing are often harsh and a bit green. 1-2 weeks of aging in fridge or at room temp can make a huge difference!
