Yesterday I checked my latest cider and it was around 1.009 FG and had the perfect sweetness and dryness to it so I decided that I was going to immediately keg and cold crash the cider. I also wanted to test out something new so I added 2 tsp of Young's Potassium Sorbate to the cider to the 4gal of cider that I had transferred to the keg.
Today I decided to do a little research on Potassium Sorbate because there's no better time to find out about what your using than after you're used it! The Interweb has given me some doubts as to what I should have done. Namely that I should have cold crashed first and then added the K-Sorbate and that I should have added K-Meta to the cider as well to prevent off flavours and smells. Also that I should have just pasteurized it and not bothered with the chemicals at all.
So now I've done even more research and I've decided to just ask the questions directly.
1. Should I have cold crashed first and then added the K-Sorbate?
2. What are the side effects of adding the k-sorbate first and then cold crashing?
3. Should I have added the k-meta too? And if so how much and what are the side effects of not doing this?
4. If I do have off smells and flavours then is there anything I can do about it? I can always make a new batch but I would prefer not to waste this one.
5. Hindsight is always 20/20!
I know K-Sorbate is generally used once all fermentation is done but I apparently only found that out today too! =(
