I just brewed a saison and my OG was a little low and trying to figure out why it was low, I realized I forgot to add the honey at flameout. can I just heat up some honey with water and add it to my fermenter. I just finished brewing it about 20 min. ago. or am i screwed. thanks!

Wait.

You should still add the honey, but wait a few days until fermentation is sorta trailing off. Dissolve the honey in a small amount of water, and bring it up to a boil then let it cool off before adding to the fermenter. If you give it time to tackle the more complex sugars in the wort first, the yeast will have an easier time than if you add the honey now. This will help dry out the saison more, which is what you want in that style.

well im glad i wasnt screwed. i heated up some honey and water and poured it in the fermenter. thanks guys!
