Help designing a Paulaner Hefe.

Good day everyone. I found two different receipes on here for a Paulaner Hefe. clone which look pretty decent, but I wanted to maybe put my own twist on it a bit. My idea was to use WLP300 as the yeast, 7 oz. Wheat ( Light) German/ Weyerman® as the specialty grains, and then 6lbs. of wheat DME.

Does this sound OK and will it come out somewhat close to Paulaner Hefe?

I didn't look at your links, but the recipe I have has a WLP380 as the yeast, and a fermentation temp at 68, and from what I understand it's pretty important to the flavor. I've never made the clone, but that's what I'll assume you need to do (it's from BYO).
 
You would probably have a lot better luck posting in the wheat and rye sub-forum since that is where the wheat experts are. I thought all hefe's had to have some malt extract but it looks like the recipe you are proposing is 100% wheat malt extract. That might be fine but to tell you the truth I know nothing about brewing wheat beer and probably never will:) Anyway, good luck and let us know how it comes out.
