Hello all,

I’m a noobie to home brewing. The main reason I’ve started is because I really like to drink triple bocks and lambics. And since I live in the almost-dry-state of Utah, its not easy for me to get my hands on them.

So far I’ve only brewed one batch, a Scottish Ale extract kit. I’m finding that patience is not one of my virtues. Its only been two weeks since bottling and I’ve already killed four bottles.

I know they take years to ferment and condition, they need to be racked to secondaries at least twice, I need at least a 15 gallon brew kettle, an oak cask, a fridge large enough to condition the cask in, etc. I’m planning to buy the equipment and experiment little-by-little so I can get to the point where I have enough experience brewing and have enough equipment to feel comfortable trying a lambic style and not worry that I’ll be dumping it out 18 months down the road.

When I get to that point, I’ll brew stouts and porters for my wife and sample them while I’m waiting for the lambic styles to condition. In the meantime, it will mostly be ales in the spring and fall and lagers in the winter.
