Hello everyone, new guy from WA state.

A friend of mine was a hobbyist brewer.. gave up on it and gave me a bunch of his brewing equipment. So, giving it a go with some cider and maybe some mead. I might 'applejack' the cider.

Figured I would make an account and document my attempts since I lurk so often.

What I've got going now is basically just 5 gallons of treetop with 10 ounces of dextrose and a half packet of QA23 yeast. I dry pitched the yeast last night and have seen no activity yet. Will be rehydrating the other half of the packet and dumping it in if I don't see activity soon.

I’d follow the directions on the yeast pack. And pitch the other half. Wine yeast is cheap. What temp is your carboy at?

Ya I ended up doing that. I rehydrated at 105°.. the packet suggested between 104° and 109°. Then dumped it in the carboy after 15 minutes. The carboy looks to be about 68 degrees from the thermometer strip.

I'm in Spokane.

The cider (technically apfelwein?) Is bubbling away nicely now.

Is it still considered applejack if I were to freeze concentrate apple wine? Hmm
