I’m new to brewing/fermenting i pulled out a hard cider kit that my in-laws got for me years ago. I thought it would be pretty fun to try, plus my wife and I love cider. I have 3 - 1 gallon batches fermenting now, I tried different cider/yeast combos on each one. I’m exited to see how they turn out.

You might want to try a batch of apple wine, It is wonderful stuff.
 
I checked my honey crisp cider and it was down to 1.004 and I tried some it was very nice. So I siphoned and racked it into a new jug. I may have been premature though I topped it off with apple juice concentrate to reduce the headspace and it is fermenting again. I think I’ll let it run out again and cold crash it than rack it again.
 
Or... you can keep racking and adding juice until the yeast can’t handle the alcohol anymore and drop out for good.

Although the few times I’ve done that the cider is thin and taste like rocket fuel for about six months. After a year it turns out great!
