Hello everyone,

I've been lurking here on the forums for some time now and have finally decided to actually get registered. I'm new to brewing, but I've got 5 gallons of mead in secondary right now and plans to get a lot more going down the road... I just need to wait on the local berries to come out to get some melomels started. Anyway, I'm excited at what the future holds and am stoked to learn more about honey, yeast, and everything in between!

I used a local honey I bought from Whole Foods in OKC from Hilltop Farms. Didn't say what variety it was, but I went with it. So far, the mead has some awesome flavors poking through the harshness.
