Hi,

Newbie to brewing! Love the site. Have my first batch brewing now 7 days in. Looks great. Brewing with the DIY Coopers kit with the Australian Lager it came with.
Simple:
Coopers Lager Concentrate
Brew Enhancer 1
Only filled to 20 liters instead of the 23 temperature staying at 24'C
(what affect will this do to the beer if any?)

also,

I actually forgot to take my OG reading.. Do i go ahead and take readings now to determine fermentation has completed? Or just wait another week and just bottle. Of course i would like to bottle as soon as I can. :mug:

Welcome, and I love this forum, too. Lots of good people and good advice.

20L instead of 23 will concentrate the flavors - same basic beer. Assuming this was somewhere in the 1.040 - 1.055 range by design, your bump in OG shouldn't get you out of the "normal" beer range. 24C (75F) is pretty warm for most yeast strains - might get lots of esters. Not sure, but I think this is below the range to get fusels - maybe someone else knows for sure. I hope this is beer temperature and not ambient - fermenting beer can be several degrees warmer than ambient air. If it's in a swamp cooler and you're measuring the bath water temperature, it should be pretty close.

If you're only 7 days in, I would let it go at least 7 more. If you are really impatient, you can take a few consecutive measurements to determine FG. After 2-3 days of it staying the same, you can assume it is about time to bottle. Be patient though, it is much better to give it time.
