Just started into the wine / cider / beer making again. I tried wine a couple years ago, unsuccessfully. It was a red but I pulled it out of second fermentation too quick....any2ays I am trying a beer now that I am going to gift my brother for Xmas along with a kit that hopefully we will make together. I also have a white wine and a cider kit to try as well...

I am gluten intolerant so I will be trying to tackle some recipes and suspect I will spend quite a bit of time on that forum.
 
Welcome! First thing to try with your new batch. Dont secondary. Theres no need to with a normal beer that doesnt require aging. Theres tons of threads on HBT regarding not secondarying.

About the gluten intolerance... I dont know if you cant get them up there, but White Labs makes an enzyme called clarity ferm. Highly recommend it. It reduces chill haze and breaks down gluten chains to less than 10ppm. My wife is gluten intolerant (born with it) and we have a friend who is celiac and both can drink my beers with no effects from the glutens.
