Originally from London, I've settled into the English west country. I'm "old school", in that I prefer to use lime juice and a cup of black tea rather than citric acid or tannin liquid. I'm primarily a winemaker and I was searching out recipes when DuckDuckGo led me here, although I've branched out into cidermaking of late. The west country is full of farmhouse scrumpy cider farms, the still sort of cider that is as far removed as possible from the chemical fizzy stuff that the only apples it has seen are in the orchards lining the freeway from the lorry taking it to flog in supermarkets. I do use kits (for simplicity and speed) but prefer proper ingredients and getting my hands dirty while preparing a good, clean must. I look forward to contributing to Homebrew Talk. All the best ...
