So I did a heffy a couple of months ago and it was great when it was young, but now that it has sat for about 4 to 5 weeks in the bottle it is just not tasting good at all. it was kinda sour/bitter taste. what could i have done wrong???

Could be an infection, but could also just be age highlighting some other flaw due to process. A hefe has a lot of "freshness" that can hide flaws for a while.

recipe/process details?
 
It was just a simple extract that I added some limon zest to I will let it age I don't drink it often my wife is a fan I like good and dark beers myself thanks
 
The off flavors will probably only intensify as it ages. Heffes and hoppy American pales tend to be better fresh. Beers with dark malts tend to age much better.
 
Wheat beers are supposed to be consumed young, they actually don't get better with age.

Also, if any light got into it, it might be skunky from being lightstruck. I learned that lesson on a wheat beer.
