Hey, I'm thinking about brewing up a hefeweizen using 35% wheat malt and 65% Pilsen what do you think? The papazian recipe for hefeweizen calls for 70% pils and 30% malted wheat
 
I use the exact opposite ratio... 2:1 wheat:pils and a little carapils/melanoidin malt sprinkled in...
 
Traditional is a minimum 50% wheat.

I like to go 50-50 Pilsen-wheat. I want a lot of wheat character, but I don't want to worry about a stuck mash.

Same, 50/50 wheat and Pilsen with a single charge of Hallertauer for 12-15IBU at 60 minutes with WY3068 at 68oF

Throw in some rice hulls to avoid a stuck sparge, especially if you go heavy on the wheat.
