I will be brewing another hefeweizen in a few weeks and would like advice on how to treat the water I will be using. I brew with RO water because my tap water has off flavors due to old pipes. Hopefully I will be able to redo all of my plumbing this summer but until then I only have RO. The recipe I have pieced together is as follows.

5 gallon batch

6lb Wheat Malt
5lb Pilsner Malt
.75lb Munich Malt

.5 oz Perle 60 min
.5 oz Tettnang 15 min

Mash Schedule:

111F for 20 min
151F for 40 min

Yeast: WLP300
Ferment 10-14 days at 62F

I am planning on treating the water with

1.25 tsp Chalk
1.25 tsp Gypsum
.5 tsp Calcium Chloride

Any recommendations or criticisms are welcome. Hefes are my favorite beer style but I have not been able to make one that I really want to drink. Hopefully the water treatments will help.
