Work kept me out of town much longer than I had anticipated and my weizen sat in the primary for 4 weeks. The FG is 1.012 and I could still taste the banana notes in the sample I took. I went ahead and bottled it, but, my question is....a beer that is usually enjoyed very young, did I mess it up or am I just not giving gods of yeast not enough credit?
