I have brewed this beer before and won medals with it but I cant find my water notes, I use BrunWater...love it thanks... I can't seem to get the ph down below 5.6 and I have tried adding 25 % distilled water...Help !

I sent a pm to Martin about this issue and ask him if adding phosphoric acid to lower the mash would be a problem, he said no it would make it a bit more crisp and or tart. The only thing I did not ask him was do you just add acid until the ph is correct or can at some point can you add to much before you reach that level.

Wow, that's some soft water! Dilution shouldn't be necessary. A few mL lactic or phosphoric acid should do the trick. CaCl and/or CaSO4 also good - boost your Ca to at least 50, and boost your Cl/SO4 as well.

Plug into BrunWater to fine-tune and listen to what Martin says.

Thanks Ty I have been using BrunWater for some time now and the same can be said for Martin !
