My hefeweizen is in primary, which is on its 9th day. I just took a hydrometer reading as the airlock activity is almost nil. I got a corrected SG of 1.013 (corrected OG was 1.057, which is too high as the recipe's target OG was 1.049). I'll be sure to take more samples over the next 2 days to make sure fermentation's done before bottling.

But that leads me to my current concern- I drank the sample and it ran too hot. That is, it burns as it goes down. There is the yeasty component of clove+banana which is not bad, but as I swallow it, it feels terrible. If I wanted to do a shot of vodka, I'd get a bottle of Smirnoff..

How concerned do I have to be? Seeing that I overshot the target OG by 0.008 and don't know how significant that is, I wonder if that has anything to do with it? Or do I simply just need to keep the hefe in the primary longer? Or will bottling it on Sunday or Monday (day 13/14) and letting it condition for longer than usual do the trick?

P.S. The recipe I used came from here: https://www.homebrewtalk.com/f70/paulaner-style-hefe-weizen-32811/
Only difference is I used 3068 Weihenstephaner yeast only.

Beers can taste really funky and strange when they are that young. I doubt that it will burn as badly or if at all once it is in bottles and the yeast has settled. Hopefully the burn you are getting isn't fusels. Just give it an extra week in the primary.
