Ok I get my new fermenting fridge tomorrow morning. Going to hook up my thermostat controler then to. After I am going to brew my 2 batch of beer. The recipe i got from my home brew store doesnt sound right to me so I am wanting to change it up.

5.5 Gal Batch
5lbs Wheat DME
1lb. Pilsen DME

1 oz Hallertau (60 min)
.5 oz Hallertau (10 min)

Fermenting @ 70* for 3 weeks.

Does this sound ok or am I going to mess the batch up by changing it.

That is pretty simple and strait foward but I would change it up a bit too. What type of yeast will you use? I like Wyeast 3068 Weihenstephan Weizen for my hefe's, it has a nice flavor profile (think banana and clove). I would add a pound of german pilsner malt and a pound of flaked oats (steeped for 30 min at 150 degrees) to give a better flavor and body. Maybe some carapils too. Have no fear of changing recipes and fiddling around, that's part of the fun.
 
I am using the Wyeast 3068 as the yeast strain. The steeping part I am not familier with would I bring the water temp to 150 with or without the DME and how would I keep it at 150 for 30 min.

without the DME - then use that as the base for your wort when you boil - how big is your brewpot?
 
Ditch the pilsen DME. No need for it, the wheat DME is 35% pilsner malt. This recipe is simple and always comes out good for me:

8oz Carapils
5lbs Wheat DME (2lbs at 60min, the rest at 20min)

1oz Tettnanger (60 min)


Stay away from WB-06 dry yeast. It's garbage. Try the Danstar Munich dry yeast, or better yet Wyeast 3068.
 
I have a similar Hefe in the primary right now:

1 lb extra light DME
6 lbs Munich Wheat DME
.5 lb Munich Briess 6-row
.5 oz Hallertau and .5 oz Hersbrucker hops at 60 minutes
Pitched a starter with Weihenstephan Weizen 3068

This made for a 1.060 OG, a bit high for a Hefe but not quite up to WeizenBock levels. Check out the sticky for great instructions on how to steep grains; pretty easy stuff. This is my first Hefe as well, good luck on yours!
 
Bring 3 gallons to around 165 degrees (the temp will drop slightly when the grain goes in), then add the grain to steep for 30 min. I use a large nylon bag to hold the grain. After 30 minutes remove the grain, let the bag drip dry. Bring to a boil, remove from burner and add extract, stir throughly. Then bring to boil again and start adding your hop additions.
