QUICK newbie question (theres a half hour of boiling left!!!) My recipe actually suggests pouring the 2 gallons of hot wort into a carboy filled with two gallons of cold water, then topping it off with the remaining gallon...NO wort chilling at all. Is this ok or should I chill my wort?

It's only OK if you can pour without any splashing at all...you don't want any air getting into the hot wort. Safer to chill it some before pouring.
