Hi guys I need a little recipe help I ordered grains from online home brew shop and they crushed every thing together so I had 8kgs of wheat malt and 1kg of Munich malt for a hefeweizen the problem is they ground up 600 grams of pale chocolate I wanted for something else in with it. I was gonna ferment with 3068 and doing a split batch open vs closed fermentation ala brewing tv.

So my question is, is there any this I can add to this to make a better recipe or Should I just role with what I've got?

Id roll with it. Lil bit of chocolate with banana and clove/vanilla sounds alright to me. Non traditional, but thats ok. Id have ferm temps stay around 62-64f, if possible.
 
That's a reasonable dunkle weiss in my book. I'd typically go with (full) chocolate at ~3%, so maybe the 6% pale chocolate will be a suitable replacement.
