I'm looking at purchasing a couple new fermenters and want to move to something that can handle 10+ gallons at a time. I have ready a couple threads about the Speidel fermenters and really like what I see. My question is whether or not I would have issues using a 15 gal fermenter if I was only fermenting a 5 gal batch.

You wouldn't have any issues.

A 5 gallon batch of beer will produce significantly more than 10 gallons of C02 and completely fill the headspace of even a 15 gallon fermenting vessel.
 
Like Mozart said. You will be fine using it for a primary, but I would not use them for a secondary. Too much headspace.
 
Awesome, thanks guys! They will be on order by the end of the day and I will keep my better bottles for secondaries.
