Brewed up the $20 Adventures in Homebrewing American wheat extract kit yesterday with my brew buddy. Steeped the grains (8 ounces of flaked wheat and 8 ounces of flaked oats) as directed. At the conclusion of the steeping process, we were left with a weird whitish/grayish/hazy looking wort. I've brewed 30+ extract batches and never had wort that at least did not have some sort of yellowsish/browinish/darker color to it. This was weird. Wort looked fine color wise once the LME was added, but it was odd. Any cause for concern or is it that way just 'cause it was oats and wheat?

No concern. You just had your steeping grains in there and then once you added your LME, as you said, things were back to normal. I had an IPA that was puke green until I got it into a keg. It worried me slightly, but it worked out well in the end.
