I am going to try and recreate a Nutella....my wife said I should do this.

Here it is:

8 LBS Oatmeal Stout Extract
1 LB Lactose Sugar
4 OZ Nibs
5 OZ Hazelnut Flavoring
1 OZ Kent Golding
1 OZ Cascade
WYEAST Irish Ale

I plan on boiling the extract and lactose. I will use Cascade for bittering and Cascade for flavoring. I will add the nibs during the secondary.

I have made this recipe (minus the hazelnut) and it was a good stout. My friends loved it. Has anyone else made something similar to this?

Im doing a similar recipe... A chocolate nut brown with hazelnut extract and cocoa nibs. I've only seen it used a couple times., 2 tablespoon for 5 gallons.
I ordered 8oz. of pure extract. I'll add it until I feel its enough.
Im trying it in a 10 gallon batch soon so I'll let you know in a week or 2. I keg so it should be soon if shipping doesn't stall.

I added 6oz of hazelnut extract to the 10 gallons and its just right. I wouldn't do anymore or it will overpower everything else.

I added it along with 12oz cocoa nibs to the 10gallon primary for 4 days then put 5 in a keg and 5 in bottles. The keg is still carbing but so far its just right. I'll see how the bottles are in a few weeks.

It's tough to know how much hazelnut extract to add. The kind I normally buy is really strong and I would add 1 teaspoon to 1 tablespoon for 5 gallons. I used some artificial baking extract this time. It smelled much weaker then my normal stuff. So I used 2 tablespoons.

Personally, I think 1/2lb of lactose is enough for a sweet stout. It adds about 0.004 to the OG and FG (in a 5 gallon batch). With the lactose my OG usually runs 1.064 - 1.062 and my FG runs from 1.024 - 1.021.
