I like the idea of building a mini fermenting tank like the one used in UK

Interesting notion, but the tiles just seem like an absolutely terrible idea.

You could make it out of 20 oz copper sheet. Use the wood to back it up and some silver soldier to make it water tight.

I'm not sure fermenting in a copper tank is a good idea.
