Just harvested yeast from a Pliny clone. My first time ever to capture yeast. I got approximately 2 mason jars full of good yeast (I think) after washing it. How about how much of this should I use when I start my yeast for my next brew?? Thanks!

What was the OG of your clone. If it was over 1.060 the yeast may be to stressed to reuse safely.

Wait three days. You will have half or less yeast than you think now. Wait another two weeks and you will have less. The yeast will continue to compact and the cell count per milliliter will go up. The longer you have the yeast, your harvest day production date, the viability will decrease.

How much to use for your next brew depends on the estimated OG of your next brew, when you are brewing, and how much clean yeast you actually have.

It is not really simple, but can be easy if you are conservative in your estimates of the possible cell count. It is much better to over pitch than under pitch yeast. That's why I say being conservative is better than leaning to the high side of possible cell count and viability.

Some sites for reading to help you out while waiting for clear beer to appear at the top of your quart jars.
